Deconstructed Eggplant Parm Pasta

I opened my fridge and found 1/2 eggplant and 1/2 yellow onion, plus a jar of unused tomato sauce. Thus, a star was born.

This sandwich was inspired by a lunch we had with my cousin in San Diego and it’s a keeper!

A healthy, flavorful alternative to french fried potatoes.

This is the kind of bowl food I dream about.

Or “hell yeah homemade pasta.”
