Smoky Carrot Fries with Pesto Dipping Sauce

Preheat your oven to 425 degrees F.

Peel and slice 6 large carrots into 1/2 inch by 1/2 inch square matchsticks as best you can. They’ll be a bit irregular in shape and size, which is fine.

Toss the carrot sticks with 2 T olive oil, a sprinkle each of salt and pepper, and 1 t cumin. Roast for 14 minutes total or until you start to see brown spots, tossing halfway through.

While the fries cook, mix 2 T pesto (pre-made or homemade) with 2 T mayonnaise.

Let fries cool, then enjoy them with the pesto dipping sauce as a snack or healthy side dish!
